Carbon Steel Knives Stainless Steel Or Carbon Steel Knives?
Stainless steel or Carbon steel knives? - carbon steel knives
I'm pretty sure that this topic has beaten to death by now. However, still can not get a definitive answer. With stainless steel, you get a better corrosion resistance and will take place, and the longest edge. Carbon steel, you will keep a sharper edge, and you can build a knife more than 2 m without breaking. I personally am a fan of stainless steel (material 440), precisely because it seems to regulate the use and abuse for the best long-term. But never a factory knife to break me. I do not believe that the sale of a knife that he did what he should do, shall be allowed at least to a reasonable extent. (I work for a living, and can not afford to own $ 600 knife.) What do you think? Is this a trivial matter? Is there a winner?
